Green Mango & Prawn Salad

Summer is knocking in the door. it is a great time to start eating food which cools you down and make you feel less lethargic and slow. High humidity makes us feel sleepy during afternoon and french , spanish are known for their afternoon nap, we can beat this by eating right food in high heat, salad can be a great choice for this. It is also important to eat seasonal food. At this moment we have green mango. to prepare green mango salad is very simple.

Thinly slice mangoes and do not wash fruits and vegetables after cutting them. Wash them before you cut them. Marinate some prawn with lemon juice and finely chopped holy basil (tulshi) stir fry them with little turmeric for color and lemon juice with basil gives great flavour when stir fried. now mixed the sliced mango with more fresh holy basil, finely chopped green chili, some unprocessed palm sugar, pinch of salt, lemon juice(for flavour use wild lemons from sylhet), chopped onion, sliced carrot, capsicum and roasted peanuts.

You can also mix some rice if you have leftover in the fridge. It gives you the carb you need for filling up the hunger. Now put the stir fried fresh prawn on the top and dress with some peanuts on the top. You can eat more rice and prawn if you need bigger portion. Parmeeda advises against using a lot of salt and sugar so use them according to your taste and possibly moderate or low level. Drink plenty of water after you wake up and an hour before your food.
